After finishing his stand-up satire class at UCLA Expansion in his twenties, Erik Griffin did a lot of open mics before quitting. He later stated that the lack of mentorship, his selfishness and his general unhappy experience were the reasons why he chose to quit.
In 2003, he came back into the game in his stand-up profession. Erik Griffin delivered his introductory stand-up collection called Specialized Foul: Volume One at Walk 12, 2013.

He appeared as Mr. Maldonado in the 2016 heartfelt show film First Young lady I Cherished, starring Dylan Gelula, Brianna Hildebrand, Tim Heidecker and Pamela Adlon.
Erik Griffin played Superintendent Borden in the 2018 satire show film Leave of Absence. In 2019, he rejuvenated Jimmy Harsh’s personality in the secret parody film Murder Secret. With Adam Sandler, Jennifer Aniston and Luke Evans.
Close to Sadie Stanley, Maxwell Simkins, Ken Marino, Cree Cicchino, Lucas Jaye, Karla Souza, Enuka Okuma, Joe Manganiello and Malin Åkerman, he co-starred as Henry Gibbs (a US Marshals Specialist) in the satire film The 2020 Sleepover.
Erik Griffin provided the vocals for Mentor’s personality in the adult, revival sitcom Ten Year Old Tom in 2021.
